Palacios Spontaneous fermentation with indigenous yeastsHeya is made at Eddie Chami's place at Mersel, it's his wife Michelle and her neighbor Claudine, who is an orchard farmer. Heya means "she" in Arabic, and a member of their all woman vineyard crew is on each label. "Kanz" is 60 40 grenache syrah fermented and aged in Lebanese amphora, they're done whole cluster carbonic. Beautifully silky and elegant, nice spice and aromatic lift from the syrah
