The name Pierreux certainly comes from the word “pierres” (stones)
followed by spontaneous fermentation with native yeasts in 500 L Hungarian oak barrels
It is fermented in a mix of steel and French oak
2023 Jintaro Yura La Partie et Le Tout Pinot Noir Georges Laval TBH Vineyard (Green Valley ofFrom Rouffach and Gueberschwihr with a mixture of whole cluster and destemmed fruit. Raised in new Demi muid for 11 months. Only 650 btls produced. 1 btl max per customer.
